
Savory Crêpes
These savoury crêpes are a great way to add variety to your breakfast. Filled with a flavourful, plant-based spread and fresh toppings, they’re light, satisfying, and full of taste – perfect for starting the day with something special.

Ingredients
Batter:
250g flour
30g corn starch
500ml Oat Hemp Drink
150ml cold water
30g olive oil
A pinch of salt
Filling:
250g cherry tomatoes
2 tbsp olive oil
A pinch of salt
200g hummus
1 tbsp sesame seeds
1 handful of cress

Instructions
1. For the batter, mix all the ingredients together until smooth. Grease a pan with a little oil and heat over medium heat. Cover the bottom of the pan with a thin layer of batter and cook the crepes one by one.
2. Wash the tomatoes and cut them in half. Heat oil in a second pan over high heat and sauté the tomatoes with a pinch of salt.
3. Spread hummus on the finished crepes and fold them. Then, divide them onto 4 plates. Top with tomatoes, sesame seeds, and cress, and serve.

Serves: 4 portions, 8 crêpes
