
Refreshing Soup
This chilled cucumber soup is light, refreshing, and easy to prepare. It cools from within, has a subtle savoury flavour, and is perfect as a small snack or starter on hot days. Simple, plant-based, and wonderfully summery.

Ingredients
1 large cucumber
20g dill
1/2 lemon
350ml Natumi Oat Natural
Salt & pepper to taste
1 snack cucumber
2 tsp sesame seeds

Instructions
1. Wash the cucumber thoroughly and cut it into large pieces. Roughly chop the dill, setting some aside for garnish. Place the cucumber and dill into a tall container.
2. Squeeze the lemon into the container and add Natumi Oat Natural. Blend everything with an immersion blender until smooth.
3. Season with salt and pepper and refrigerate for about 2 hours.
4. Divide the cold soup into 4 small bowls.
5. Slice the snack cucumber lengthwise into thin strips and use them, along with the remaining dill and sesame seeds, to garnish the soup before serving.

Serves: 4 portions
